It's Been Awhile

Trey and I are still eliminating crappy foods and taking vitamins. We also have joined a local YMCA. It's been one of the best things we have done for our family. We use the ymca to work out, go on a dates, get free childcare, spend time with ourselves, and get healthy!! Its funny my NT book doesn't talk about physical health being so important to a healthy pregnancy, probably because its a book about food.
Anyways I forgot how much fun it is to work out especially with a friend or spouse. Or how nice it is to take a break and have some me time!! Trey and I are super happy with our newlife style and plan to continue it forever! I feel great and have learned so much in the past two months. We cannot wait to have another baby and hope the day comes soon.

Hey y'all haven't been doing many new recipes. Lots of repeats. So much has been going on I haven't been able to blog. I'm still looking for a recipe to break-in the new kitchen aid. I'm thinking of using it to make butter from pima.

Quick Update

So this past week I celebrated my birthday 3 or 4 times. I ate, sugar, white flour, and many non organic foods. And every time I did eat sugar I would get the worst stomachache and would just crash and feel awful. So glad I am back restricting myself and cooking foods that make me feel good inside! Tonight I am cooking Black Bean Soup for community group.

Lemon Mousse

Bombest Liver Ever

Hands down the best meal we have eating all month. I have had liver before but not like this. This is how liver is supposed to taste. Organic grass fed beef liver. This liver was soaked in organic lemon juice for several hours, then drenched in unbleached flour, Celtic sea salt, and ground pepper. Then fried up in a fresh butter skillet. YUM. AND THIS MEAL COST US $5.... YES $5. liver is yummy

Organic Chicken Pasta w/ Pima Cream

This has to be my favorite dish so far. Most ingredients came from Trader Joes, whole grain pasta, whole chicken, and vodka sauce. Pima cream came freshly cultured from atop my fridge. Delish dish on this winter day at home :-)

Black Bean Enchiladas

So funny story, we hosted community group last night... This is when we get together with people from our church and fellowship while eating food and talking about that weeks sermon. I needed to plan what was for dinner since there was a good chance Trey and I couldn't eat what other people were bringing. So I decided to make black bean enchiladas. These enchiladas had some great ingredients but to someone used to soft delicious white tortilla enchiladas then they were going to think my enchiladas were dry chewy and tasteless... I was so embarrassed that everyone was going to think I was a horrible cook :-(. They really didn't taste that bad but I had to make some recipe alterations. Instead of using the enchilada sauce as a garnish I think they should be soaked in sauce, also add sour cream, cottage cheese, tomatoes, and avocados. I wasn't too impressed with the recipe in my NT book. So tip of the day... Don't feed company a recipe you have never made before!!! haha

BTW I'm really excited my cousin who is also a Christian bought Nourishing Traditions and wants to know more about it! So excited :-)

Update

Hey I've been taking a rest from the blog for a couple days but now I'm back. I have felt a little behind and really tired this past week. I don't think its because of my new diet because Trey has been FULL of energy since we started. I think it may be because I'm not teaching Zumba or exercising as much. I also think I should get tested for my iron levels. While I was pregnant I was anemic. Tonight I'm making black bean enchiladas. Yummmmm

Date Night

Trey and I found an awesome all vegan organic cafe/restaurant in the U-district. We are not vegan but we needed a place to go out and eat at before our imax movie. So we are here at Chaco Canyon Organic Cafe. Trey ordered the spicy peanut bowl and I ordered the lentil burger. So excited to eat! I'm hoping we will be full enough to not want to eat all the yummy smelling popcorn... That's never the case.

This Weeks Chicken Stock

     I've been making my own chicken stock since Jennifer May taught me last winter in Fairbanks. The May family is amazing. We had the privilege to live with them for almost 2 months. They are a family of 5, naturopathic doctor husband, homemaker bride, and three boys. Living with them we learned so much! Trey and I have always been interested in homesteading and natural medicine. Living with them we learned new things everyday! Jennifer taught me to make anything from delicious nutritious meals to cleaners and beauty products. Also they were there to give us tips on having a healthy diet and what to take when you have the flu. Because of them I now can make the best chicken soup/stock just by boiling the bones and skin of my two day old whole chicken dinner. If you haven't tried homemade chicken stock your really missing out!!

Organic No Sugar Banana Raisin Oatmeal Cookies

Trey would not stop asking for cookies tonight. It's was annoying but cute too. He was willing to run to the store and pick up some ingredients. We baked these awesome guilt-free cookies. Here's a link for the recipe. We added some maple syrup after tasting the dough... Haha it was more like banana bread without it.

Cookie Ingredients

You will need as much organic ingredients as possible for the following recipe. Two medium ripe bananas, 1-1/4 cups rolled oats, 2 tbsp. coconut oil or softened butter, 2 tbsp. almond butter, 2 tbsp. almond milk or soymilk, 1 egg, 1-1/4 cups whole wheat pastry flour, 1 tsp. baking powder, 1/2 tsp. baking soda, 1 tsp. cinnamon, 1/2 tsp. nutmeg and 1/2 cup raisins.


Prepare to Bake

The oven needs to be at 350 degrees Fahrenheit. Line a cookie sheet with parchment paper. Mash the banana in a large bowl. Stir in the oil or butter, almond butter, egg and milk. In another bowl, whisk the flour, baking powder, baking soda and spices. Stir into the oat mixture. Drop by large tablespoonfuls onto prepared cookie sheet. Bake 14 minutes or until lightly browned.


Day 4

This diet really hasn't been the challenge I thought it was going to be. Trey and I have been staying strong. There are a few things we have changed though. We have been finishing up our brown rice and other foods before buying organic. We are really strict about our meats, eggs, and dairy being organic but have eatin some non organic fruits and dressings. We are slowly transitioning to only organic. By the way Trader Joes is way more amazing to me now!!!!! I have always loved the place but now I appreciate it so much more. Great food I can eat and really great price. The latest on my kefir... it is taking forever to activate. I emailed moonwiseherbs and they were much help. I have been using the right milk, checking it everyday, feeding it everyday, and keeping track of the temperature. I guess it's just taking longer. I'll keep doing what I am doing and maybe the grains will start to grow and firm. Its so mushy. Be back tomorrow.

Keeping The Tradition

This morning was whole wheat sourdough pancakes. Today was the first morning in a long time I got up before Trey to make him breakfast and lunch. I've always dreaded this task but this morning I was so excited! Ever since I started this new life-style I have been serving my family with a loving heart. Instead of doing it out of obligation, I'm doing it out of love and compassion. I hope and pray I'll continue to serve my family this way and enjoy it always.

And my pancakes were amazing.
I alomst forgot to mention my 91 year old grandmother is still making sourdough pancakes every Sunday. I'm so proud to be continuing this tradition:-)
